The project "InnOFoodLabs" supports 23 innovations in the organic food value chain through 12 Living Labs in 9 European countries. The aim is to improve the processing and marketing of organic food and to strengthen regional value creation.
The innovations focus on small-scale processing, cooperation between farmers and processors, and new distribution models. Innovation roadmaps accompany the developments. A Community of Practice facilitates knowledge exchange, training, and study visits. Sustainability assessments are carried out using adapted methods, complemented by analyses of acceptance, business models, and policy frameworks. In this way, the project contributes to future-oriented, inclusive, and responsible food systems.
