Encouraging the cultivation of minor legumes in Switzerland through the development of innovative plant-based foods

Abstract

The growing demand for alternative proteins in Switzerland highlights the need to explore a wider range of plant-based sources and increase domestic production. However, there are significant knowledge gaps in linking the needs of the food industry with the breeding and cultivation of underutilized legumes such as grass pea and white lupin, which have high potential for climate-resilient agriculture but are currently underutilized due to their content of some anti-nutritional factors.

This project proposes a comprehensive approach to study Swiss-bred white lupin and grass pea as local protein sources. It aims to link breeding strategies with food processing, involving stakeholders across the value chain.
