This project seeks to revive the cultivation of faba beans in Valais, where they were historically grown in alpine regions, in synergy with locally adapted cereal crops. Rich in plant-based protein, legumes such as faba beans contribute significantly to soil fertility, resource efficiency, and the reduction of the environmental footprint of food production.
Building on the experience of the initiative "Céréal’Hier", the project leverages the growing momentum around ancient cereals—such as spelt, emmer, and einkorn—to develop a structured, integrated, and innovative organic value chain. Particular emphasis is placed on promoting local varieties that are well adapted to the Alpine terroir.
The initiative encompasses experimental cultivation of Valais faba bean and cereal varieties with a group of pioneering producers, the development of innovative food products combining faba beans and local cereals, the structuring of a network of regional partners, and the design of a supply chain model that can be replicated in other Swiss regions.
By bringing together a broad range of local stakeholders—including producer associations, processors, public authorities, collective catering services, promotional bodies, and Swiss nature parks—the project aims to strengthen coordination between agricultural, food, and climate policies. It forms part of a sustainable development strategy, contributing to the agroecological transition, enhanced food sovereignty, and the creation of regional economic value.
