On-farm slaughter of pigs and small ruminants

Abstract

Loading and transporting farm animals is associated with stress, which has a negative impact on animal welfare and meat quality. On-farm slaughter can reduce these negative effects. In order to optimally implement the slaughtering of pigs and small ruminants on the farm, processes are established and continuously improved in this project. Behavioural observations and analyses of meat and blood samples are used to document the stress of the animals at slaughter (pH, lactate, glucose, cortisol and Enterobacteriaceae in the abdominal area). Mobile slaughter units are adapted for pigs and small ruminants. The results will be presented in a technical leaflet, in a video and at an information event. FiBL will continue to provide advisory services after project completion. The aim is to increase the practice of slaughtering pigs and small ruminants on the farm, with positive effects on animal welfare and the profitability of farms and local butchers.
