Promotion of organic products in canteens: environmental impacts and costs

Abstract

Bio Suisse has set itself the goal of increasing the proportion of organic products in canteens. In two pilots, FiBL is calculating the environmental impact of a higher proportion of organic products in various scenarios by means of environmental accounting at kitchen level. The associated costs are also being determined in the project.

The results are intended to serve as a guide for community caterers who are also aiming for a higher organic share and are interested in the resulting costs and environmental impacts as well as suitable accompanying measures.
