Abstract

The issue of food waste is gaining more and more attention in society and politics, as it is responsible for a considerable part of the ecological footprint of food production. For example, over 50% of vegetables are lost between the field and the plate. In particular, organic beetroot has proven to be problematic during the storage period. This project, therefore, aims to find measures and production strategies that reduce disease pressure and extend the storage life of organic beetroot.
