Development of a concept for the evaluation of flavours for the use in organic food

Abstract

According to the EU Organic Regulation, natural conventional flavouring substances and extracts as well as organic flavours can be used for organic foods. The EvA project aims to develop a uniform information basis and procedure to assess conventional flavours with regard to their suitability in the production of organic products. On the other hand, technological challenges in the production of organic flavours will be investigated. It is to be examined whether the already approved substances are sufficient for the production of organic flavours or whether adjustments in the EU Organic Regulation 889/2008 are necessary.

The project is carried out in cooperation with the Büro Lebensmittelkunde & Qualität (BLQ). During the project period a close exchange with experts such as organic processors, flavour producers, authorities and associations is foreseen. In addition to handouts for those involved in practice, a commercial product list of usable flavourings for organic processing will be drawn up. This will assist organic processors in selecting suitable flavours.
