Lösungen für eine Qualitätsgetreideproduktion auf weniger fruchtbaren Standorten

Das Projekt untersucht drei Möglichkeiten, die Produktion von Qualitätsbrotgetreide auf weniger fruchtbaren Standorten zu ermöglichen. Der erste Teil befasst sich damit, inwieweit bodenschonende Bewirtschaftung eine Lösung ist; er definiert, unter welchen Bedingungen es mit den aktuellen Weizensorten tatsächlich zu schwierig ist, die Qualitätsziele zu erreichen. Der zweite Teil analysiert, welche Lösungen verschiedene Arten von Brotgetreide (Einkorn, Emmer, Dinkel, Weizen Composite) unter weniger fruchtbaren Bedingungen bieten können. Der letzte Teil analysiert bereits bestehende Pionierprojekte, in denen mit Urgetreide gearbeitet wird und die Bauern und Bäcker zusammenbringen.
