Market and requirement analysis for organic and regional products in community catering in the organic model region of South Hesse

Abstract

A market and requirements analysis is carried out to determine the potential of processing and using of organic an regional products in community catering. An appraisal is prepared that shows the business realities in the areas of products, price structures and needs. Personal interviews with production companies, catering companies and companies for processing and trade are used to collect the necessary data.

Based on the interview results, potential is assessed and recommendations for action and next steps are formulated.
